Title: Sweet Potato Meringue Pie [America]

1 | Pie crust | |
POTATOES | ||
3 | Sweet potatoes, large | |
2 | Egg yolks, beaten | |
1/4 | ts | Nutmeg |
1/4 | ts | Salt |
2 | tb | Brown sugar |
MERINGUE | ||
2 | Egg whites | |
2 | tb | Powdered sugar |
Boil sweet potatoes until tender. Peel and mash. Preheat oven to 300. Beat in egg yolks, nutmeg, salt, and brown sugar, then stir until potatoes are creamy. Spoon sweet potatoes into pie crust and bake for 25 minutes, until crust is golden. Cool. Beat egg whites with sugar until stiff. Spread meringue over top of pie, and bake at 300 until meringue is lightly browned. Serve hot.
