Title: Townhouse Pound Cake

1 | c | Butter or margarine; soft |
3/4 | c | Granulated sugar |
1 | ts | Vanilla |
1/2 | ts | Grated lemon peel |
3 | Eggs | |
1 1/2 | c | Flour |
1/2 | ts | Baking powder |
1/4 | ts | Salt |
Confectioners sugar |
Cream butter or margarine and sugar until light and fluffy, about 3 to 5 minutes at medium speed of electric mixer. Add vanilla, lemon peel and eggs (one egg at a time, beating well after each.)
Sift together flour, baking powder and salt; stir into mixture.
Grease the bottom only of a 9-by-5-by-3 inch loaf pan; fill with batter. Bake at 350 degrees F for 50 minutes, or until done. Cool in pan. Garnish with sifted confectioners sugar lightly on top.
