Title: Whole Wheat Plum Cake - a Wholesome Treat

2 1/2 | c | Whole wheat flour (pref. stone ground |
2 1/2 | c | Plums (use dried prunes) |
2 | oz | Chopped almonds |
1 | c | Water |
1 | oz | Olive oil |
1 | Egg | |
1 | Lemon | |
1 | c | Honey |
Soak the prunes for 12 hours. Mix the flour with the water (include the soaking water with the one cup). Add egg, 1/2 cup honey, the juice of the lemon, and 1 oz of the almonds. Mix together and put in an oiled glass or earthenware dish.
Cover with a layer of the pitted prunes. Spread the rest of the honey on top and sprinkle with the remaining chopped almonds.
Bake for 30 minutes in a moderate oven, 325-375~F (170-200~C).
