Title: Zucchini Brownies

Yield: 16 Squares
4 | Egg whites | |
1 | md | Zucchini; grated to make 1 cup |
1 | c | Whole-wheat flour |
1 | c | Sugar |
1/3 | c | Cocoa powder |
1/2 | ts | Baking powder |
1/3 | c | Vegetable oil |
1 | ts | Vanilla |
1/4 | c | Walnuts; chopped (opt) |
Heat oven to 350F. In food processor or blender, whip egg whites. Add grated zucchini to blender until finely chopped. Sift dry ingredients together in mixing bowl. Stir in oil, vanilla, nuts and zucchini mixture until just blended. Do not overmix. Pour into lightly oiled 8-inch square baking pan. Bake 30-35 minutes. Cool and cut into squares.
