Title: Larry's Devil's Food Cake

4 | Squares unsweetened chocolate, melted | |
1/2 | c | Butter, at room temperature |
1 1/2 | c | Sugar |
2 | Eggs, at room temperature | |
1 | ts | Vanilla |
2 | c | Sifted cake flour |
1 | ts | Baking powder |
1/2 | ts | Salt |
1 | c | Sour cream, at room temperature |
1 | ts | Baking soda |
1/3 | c | Boiling water |
CHOCOLATE ICING | ||
2 | oz | Semi- or bittersweet chocolate, melted |
3 | oz | Cream cheese, at room temperature |
2 | tb | Butter, at room temperature |
2 | c | Sifted powdered sugar |
1 | tb | To 2-tb hot milk or coffee |
1 | ts | Vanilla |
I found this recipe, handwritten and stained, inside a 1932 cookbook. It still is a favorite of ours. This year, my son's fiancee, Kendra, made it for our barbecue.
INSTRUCTIONS: Preheat the oven to 350 degrees. Butter two 8-inch cake pans and fit with rounds of parchment. Butter the parchment.
For the cake: Melt the chocolate and set aside. Beat the butter in a mixing bowl, slowly adding the sugar. Beat for 2 minutes until lightened. Add eggs, 1 at a time, beating well after each. Stir in the cooled chocolate and vanilla. Sift cake flour with baking powder and salt. Add to the creamed mixture, alternating with the sour cream, and ending with the dry ingredients. Dissolve the soda in boiling water. Immediately stir the bubbling mixture into the cake batter, using a whisk to blend just until combined. Pour the batter into the cake pans. Bake for about 25 minutes, or until a cake tester comes out clean.
Let cool for 10 minutes, then run a thin knife around edges, and unmold cakes onto cooling racks.
To prepare the icing: When the melted chocolate is barely warm, use a small whisk to blend in the cream cheese and butter. Sift in the powdered sugar. Blend enough of the hot milk into the icing to make it creamy enough to spread. Stir in the vanilla.
Place one of the cake layers on a flat plate; spread with icing. Top with the second layer and lavishly swirl on the remaining icing.
Serves 8.
PER SERVING: 685 calories, 7 g protein, 91 g carbohydrate, 36 g fat (22 g saturated), 116 mg cholesterol, 466 mg sodium, 3 g fiber.
