Title: Molasses Zucchini Cake

1 | /3 c | sugar |
1 | /2 c | molasses |
1 | /4 c | vegetable oil |
1 | /2 c | chopped nuts |
2 c | all-purpose flour | |
1 t | s salt | |
1 t | s baking soda | |
3 | /4 t | s baking powder |
1 1 | /2 t | s dried grated lemon rind |
2 | /3 c | buttermilk |
2 c | zucchini -- diced (NOT | |
: | GRATED) |
Mix egg, sugar, molasses, and oil; add nuts. Mix together flour, salt, soda, baking powder and lemon rind; add alternately with buttermilk to egg mixture. Stir in chopped zucchini. Pour into a greased and floured 9x13-ich pan. Bake at 350-degrees for 35-40 minutes.
