Title: Scannels' Soda Bread

1 1/2 | c | Whole wheat pastry flour |
1 | c | Oat bran |
1 1/2 | ts | Baking powder |
1/4 | ts | Baking soda |
1/4 | ts | Salt |
1 | tb | Sugar or other sweetener |
2 | tb | Caraway seeds |
1/4 | c | Raisins or currants |
1 | c | Potato or soy milk |
1 | tb | Lemon juice |
Mix milk and lemon juice and set aside. Mix dry ingredients well, then blend in caraway seeds and currants. Add milk stirring to make a stiff dough. Turn into a lightly floured board and knead for 1 minute. Shape into a round loaf and put into a greased 8" round pan. With a floured knife, cut a cross into the top. Bake at 350F for 40 minutes or until lightly browned. Cut into slices crosswise when cooled. Total cal. per slice-162 Fat-2grams From the Vegetarian Journal March/April 1993
