Title: Apple Pie Bars

4 | c | Peeled tart cooking apples |

1 | (6 oz.) can apple juice | |
1 | ts | Ground cinnamon |
1/4 | ts | Ground nutmeg |
1 | tb | Cornstarch |
1/2 | c | Sugar |
3 | c | All-purpose flour |
1 | c | Sugar |
1 | ts | Baking powder |
1 | c | Butter -- softened |
2 | Eggs -- slightly beaten |
FOR FILLING: In a large saucepan, combine apples, apple juice, cinnamon and nutmeg. Cook over medium high heat until boiling, stirring occasionally. Combine cornstarch and the 1/2 cup sugar. Stir into boiling mixture, cook and stir until thickened and bubbly. Remove from heat; cool slightly.
FOR CRUST: In a large mixer bowl stir together flour, the 1 cup sugar, baking powder and 1/4 teaspoon salt. Add butter and eggs. Beat on low speed until mixture is blended and crumbly. Press 2/3 of crumb mixture (3 1/2 cups) into a greased 15 x 10 x 1 inch pan. Spread apple mixture evenly over crust. Sprinkle remaining crumbs over apples. Bake at 375 degrees for 25 to 30 minutes or until golden brown. Cool, cut into bars. Makes 48.
