Title: Fresh Tomato-Basil Pasta Sauce

Yield: 2 Servings

1/2cButter
2lgGarlic cloves, minced
5mdPlum tomatoes, seeded
3/4cChicken broth
5 Sun-dried tomatoes, soaked
3 Green onions, chopped
1/2tsRed pepper flakes
  Fresh basil, to taste
1/2tsOregano
  Fresh ground pepper, to tast
  Grated mozerella, to taste

Put sun-dried tomatoes in a cup and cover with boiling water for 5+minutes. Remove and chop. Retain juice. Melt butter in medium-high skillet. Add garlic and saute for a moment. Add chopped tomatoes and mix well with butter and garlic. Add sun-dried tomatoes and cook until tomatoes are just softened. Add chicken broth and some sun-dried tomato juice. Reduce to thickness desired. Add S/P, basil and oregano to taste. In the last few moments add green onion. Taste for seasoning. Serve over pasta and sprinkle with cheese. Garnish with green onion tops.
