2 | pk | Unflavored gelatin |
1/2 | c | Orange, pineapple or apricot |
. juice | ||
4 | Egg yolks | |
1 | tb | To 2 honey or sugar |
1/4 | ts | Grated lemon peel |
3 | tb | Lemon juice |
2 | c | Coarsely chopped fruit* |
2 | c | Plain yogurt |
4 | Egg whites; beaten stiff | |
Fresh fruit for garnish |
*Such as strawberries & bananas, blueberries & strawberries, or apples & raisins.
1. Combine gelatin and fruit juice in top of double boiler and let stand 5 minutes to soften. Heat over hot water until gelatin is completely dissolved.
2. Beat egg yolks until very light. Mix in honey, lemon peel, lemon juice and fruit. Stir in gelatin and yogurt. Fold in egg whites; spoon in to dessert dishes. Chill until firm. Garnish with fresh fruit before serving.
