Title: Summer Relish
Categories: Pickle Relish
Yield: 1 Servings

1qtRipe tomatoes; peeled and chopped
1 1/2cCelery; finely chopped
1cOnion; finely chopped
1 Apple; chopped
2tbHorseradish
2tbSalt
2tbMustard seed
1/3cBrown sugar
1/4tsCloves
1/4tsMace
1/2tsCinnamon
1dsCayenne
1 1/2cVinegar

Mix all ingredients thoroughly. Cover and refrigerate. If too juicy, drain off some liquid. Makes about 11/2 quarts.

Tootie Notes: This keeps very well in the frig-be sure to cover it with a tight fitting lid. It will give the frig a "rich" smell otherwise. This is good with so many things. Red beans for one thing.
