Title: Pickled Tomato Salad

3 | lg | Tomatos, cut into eighths |
1 | md | Green pepper, chopped |
1 | md | Red onion, thinly sliced into rings |
2 | tb | Minced fresh basil |
1/2 | c | Frozen apple juice concentrate, thawed |
1/2 | c | Cider vinegar |
1/4 | ts | Salt |
1 | tb | Vegetable oil |
1 | ts | Sugar |
1 | tb | Pickling spices, tied in a cheesecloth bag |
In a bowl, combine tomatoes, green pepper, onion and basil and set aside.
In a saucepan, bring remaining ingredients to a boil. Reduce heat and
simmer for 5 minutes. Remove pickling spices. Cool to room temperature.
Pour over vegetables. Cover and refrigerate at least 1 hour before serving.
