Title: Mock Sausage and Peppers

1tbVegetable oil +
1tsVegetable oil
1/2cGreen pepper; finely minced
1/2cOnion; finely minced
1 1/4lbGround turkey;
1/4tsGround sage;
1/4tsDried thyme;
1/4tsDried marjoram;
1/8tsGround savory;
1/4tsPepper;
1/2tsFennel seeds; crushed
1/4tsSalt;

Heat oil in skillet, add peppers and onions and cook until tender, about 10 minutes. Cool. Combine peppers and onions with turkey and remaining ingredients, mixing well. Chill an hour or so to blend flavors. Form into 8 thin patties. Cook in nonstick skillet until lightly browned on both sides.

Per serving: 26g protein, 19g fat, 3g carb., 271mg sodium, 95mg chol., 284 calories.
