5 | lb | Tomatoes, peeled and diced |
1 3/4 | c | Sugar |
1 | c | Raisins |
1 | c | Cider vinegar |
3 | tb | Ginger |
2 | tb | Salt |
4 | lg | Cloves garlic, minced |
1 | tb | Crushed red chile |
1/2 | ts | Ground dried habanero chile |
Combine all ingredients in large heavy saucepan. Bring to a boil, lower
heat, and simmer uncovered, stirring often, until very thick, about 2
hours. Ladle into hot sterilized 1/2- or 1-pint jars and seal tightly.
Process jars in boiling water bath for 15 minutes. Cool. Store in
