Title: Salsa De Habanero (Belizean Habanero Sauce)

Yield: 1 Cup
1 | sm | Onions; chopped |
1 | tb | Oil, vegetable |
1/2 | c | Carrots; chopped |
1 | c | Water |
10 | Chiles, habanero; seeded, stemmed, minced | |
1/4 | c | Lime juice |
HEAT SCALE - EXTREMELY HOT |
Saute the onion in the oil until soft. Add carrots and water. Bring to a boil, reduce heat, simmer until carrots are soft. Allow mixture to cool to room temperature. Add habaneros and lime juice to carrot mixture. Place in blender and puree until smooth. This sauce will keep for weeks in the refrigerator. Use to spice up eggs, sandwiches, soups and seafood.
