Title: Spice Rub for Beef Steaks

Yield: 1 Servings
1 1/2 | tb | Dry mustard |
1 1/2 | tb | Black peppercorns, cracked |
1 1/2 | tb | Ground coriander |
1 1/2 | tb | Paprika |
1 1/2 | ts | Cayenne pepper |
2 | lg | Garlic cloves, minced |
2 | tb | Peanut oil |
3 | tb | Cognac |
Grind spices and garlic in a mortar with pestle. When finely ground, work in oil and cognac. Rub over both sides of steak and let marinate for 1 to 2 hours at room temperature before grilling.
Yield: Enough for two 2-pound steaks.
