Yield: 6 Servings
1/2 | c | Whole buckwheat |
1/2 | c | Brown rice; raw |
1/2 | c | Wild rice; raw |
4 | c | Water; seasoned with salt |
1/2 | c | Vegetable stock |
2 | | Medium onions; chopped |
1 | c | Celery; chopped |
1/2 | c | Mushrooms; chopped |
1/4 | c | Fresh parsley; chopped |
2 | ts | Cumin |
| | Salt and pepper to taste |
Bring buckwheat, rice, and wild rice to a boil in 4 cups of water
seasoned with salt. Cover and simmer about an hour. Add more water, if
necessary. Saute onion, celery, and mushrooms in vegetable stock until
tender. Combine all ingredients including parsley and cumin. Pour into a
non-stick loaf pan. Bake at 350 degrees for 1 hour. Serves 6 Calories: 173
