Title: The Perfect Tomato Sauce

1tsVegetable oil
1mdOnion; chopped
2clGarlic; chopped
2cn28-oz low-sod whole tomatoes
1cn6-oz low-sod tomato paste
2tsDried Italian seasoning
2 Bay leaves
  Salt
  Pepper

In medium, heavy-bottom saucepan, stir together oil, onion and garlic. Cook over low heat, stirring often, until the onion is very soft and aromatic, about 6 to 8 minutes. In food processor or tomatoes. Add tomatoes and tomato paste to onions; bring to simmer over medium-high heat. Add Italian seasoning and bay leaves. Reduce heat; let sauce simmer slowly for 30 minutes, stirring bottom often to prevent burning. If adding meatballs, do so at this time. Simmer sauce for another 20 minutes (50 minutes total - with or without meatballs), stirring often. Season to taste with salt and pepper. Remove bay leaves before serving.
