Title: German Potato Salad with Sausage

3 | sl | Bacon; cut into 1" pcs. |
1 | md | Onion; cut into 1/8" slices |
2 | cl | Garlic; crushed |
1/3 | c | Chicken broth |
1/3 | c | White wine vinegar |
3/4 | ts | Salt |
1/4 | ts | White pepper |
1/4 | ts | Dried dill weed |
5 | md | Potatoes; peeled, cut into 1/2" slices |
1 | lb | Bratwurst; cooked, cut into 1" pieces |
1/2 | c | Sour cream; regular or light |
1/2 | ts | Dry mustard |
1 | Green bell pepper; diced | |
4 | Radishes; thinly sliced | |
1/3 | c | Parsley; minced |
In pressure cooker, saute bacon 2 mins. or until crisp. Stir in onion and garlic, and cook 2 mins. Add broth, vinegar, salt, pepper, and dill; mix thoroughly. Add potatoes and sausage and stir well. Secure lid. Over high heat, develop steam to med-high pressure. Reduce heat to maintain pressure and cook 4 mins. Release pressure accdg. to manufacturer's directions. Remove lid.
Stir potato/sausage mixture carefully but thoroughly. Add sour cream, mustard, bell pepper, radishes, and parsley; tossing gently to mix. Pour salad into serving bowl and serve warm or chilled. Makes 6 to 8 servings.
