Title: Bread Pudding with Amaretto Sauce

4 | Eggs | |
1 | c | Packed brown sugar |
1 1/4 | ts | Cinnamon |
2 | ts | Vanilla extract |
1/2 | ts | Salt |
4 1/2 | c | Milk |
4 | c | Cubed dry french bread, (4 or 5 cups) |
1 | c | Golden raisins |
Amaretto Sauce (recipe follows) | ||
Whipped cream | ||
Maraschino cherries |
Beat eggs and brown sugar in large mixer bowl until thick. Add cinnamon, vanilla and salt. Mix well. Stir in milk. Fold in bread. Spoon into 2-quart casserole. Add raisins; mix well. Place casserole in baking pan containing 1-inch water. Bake at 350 degrees for 1-1/2 hours. Spoon hot bread pudding into tall goblets. Pour warm Amaretto Sauce over pudding. Garnish with whipped cream and maraschino cherries Yield: 8 Servings
AMARETTO SAUCE
2 cups sugar 1 cup unsalted butter 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 cup Amaretto
Combine sugar and butter in heavy saucepan. Cook over medium heat to 234 degrees on candy thermometer, soft-ball stage, stirring constantly. Stir in spices and Amaretto. Serve warm over warm Bread Pudding. Yield: 1-1/2 cups.
