Title: Chicken/turkey and Mushrooms Parmesan

Yield: 4 Servings
1 | lb | Boned chicken or turkey breasts,cut into strips |
1/4 | c | Chopped onion |
2 | tb | Oil |
10 3/4 | oz | Can condensed cream of mushroom soup |
1/4 | c | Water |
2 | tb | Dry sherry wine |
1 | c | Sliced mushrooms |
1/2 | c | Sliced red or green bell pepper |
1/4 | c | Grated Parmesan cheese |
1 | Bag Minute Rice Boil in Bag rice,cooked |
Cook and stir chicken and onion in hot oil in a skillet until chicken is lightly browned and onion is tender. Stir in soup, water and wine. Add mushrooms, peppers and cheese. Bring to a boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally. Serve over rice. Top with additional cheese, if desired.
Makes 4 servings.
