These recipes came from a cookbook called "FEEDING FIDO" by Joan Cone,
Arthur L. Cone, Jr., and Robert H.
George, D. V. M. HAM JERKY - Slice a 3 lb. canned ham into 1/4 inch
slices. Cut each slice into 3 strips and place on a rack in a shallow 2
inch deep oven pan.
Place pan contaianing ham strips in a 150 to 200 degree oven or convection
oven for about 5 hours, or until ham is so hard you can snap it. NO
refrigeration is needed. BEEF OR VENISON JERKY - Slice stean with grain
into pieces no larger than 1/4 inch wide and 1/2 inch thick. These strips
can be 3 to 4 inches long. Dip them in soy sauce and place upon a rack in a
2 inch deep oven pan. Sprinkle generously with garlic salt. Place in a 150
degree or a convection oven for 10 to 12 hours. NO refrigeration is needed.
I think these would be good as a people snack - especially if you go
camping.
MM format by Ursula Taylor - DNTK78B.
PERSONAL NOTE from Ursula Taylor - also see no reason why you can't do
this in a dehydrator if you have one ~ just follow the manufacturer's
directions.
