Title: Beef and Vegetables over Noodles

12ozRound steak,1/2" thick strip
1tbOlive oil
1/2tsSalt
1/4tsPepper
2cBroccoli,flowerets & stems
1/2lbMushrooms,sliced
1 Onion,small,sliced
4tbBeef broth
3tbReduced-fat sour cream
12ozWide egg noodles,cooked

Brown meat in oil in large nonstick skillet, 2-3 minutes. Add salt and pepper. Remove meat. Add broccoli, mushrooms and onion to skillet. Add broth as needed to prevent sticking; cook, stirring, 2-3 minutes. Add beef; heat through. Remove from heat. Stir in sour cream. Serve over noodles.
