1 | | Partridge breast |
1 | c | Flour |
1/2 | ts | Paprike |
2 | tb | Butter |
| | Salt and pepper |
Clean partridge breast and remove skin. Cut into thin slices. Dip each
slice of meat in mixture of flour, paprika, salt and pepper. Preheat a
heavy skillet, preferably cast iron. Slowly saute breast slices in butter
over low heat until crisp and golden brown, about 14-16 minutes on each
side. Serve with your favorite salad, vegetables and potato.
