Cardamom is a very fragrant, flavorful spice that adds a spicy-sweet
flavor to baked foods. It is a popular ingredient in Scandinavian Breads,
cookies, and cakes.
Cardamom golden raisin almond bread is a variation of a Danish sweet
bread I once received as a gift. It is rich in butter, eggs, and cardamom.
Sprinkled with a dusting of confectioners' sugar, the loaf is also
attractive when sliced, since it is chock full of golden raisins and
almonds. (The above paragraphs were just above the recipe in the
cookbook.)
All ingredients must be at room tmeperature, unless otherwise noted. Add
ingredients in the order specified in your bread machine owner's manual.
Add fruit and nuts at the appropriate moment for your model bread machine.
Set bread machine on the basic/standard bread making setting. If possible,
select light baking cycle. It not, use medium or normal setting. Do not
use the programmable timer when making this bread since the recipe contains
perishable ingredients. If desired, dust bread with confectioners' sugar
after bread has cooled to room temperature.
PERSONAL NOTE from Ursula Taylor - for diabetic use make your own
powdered sugar replacement and dust with that.
