Title: Fried Prawns with Tomato Sauce

1 1/2 | lb | Prawns cut into sections |
2 | Slices ginger | |
1 | Stalk spring onion cut into | |

2 | tb | Oil |
1 | tb | Cooking wine |
2 | tb | Cornstarch |
SAUCE: | ||
2 | tb | Catsup |
1/2 | ts | Sugar |
1 | ts | Wine |
1/2 | ts | Soy sauce |
1 | tb | Water |
1 | cl | Garlic |
Salt and pepper to taste |
To clean prawns (large shrimp), slit backs and remove black veins. Heat the wok, add the prawns and let cook thoroughly until the color turns red. Put prawns aside.
Reheat the pan and add 2 T. oil. Heat the oil, add ginger and spring onions. Then add prawns again and fry for 2 minutes. Add wine, salt, pepper and cornstarch sauce ingredients and water. Boil for 5 minutes. Add cornstarch mixture. Stir constantly until mixture thickens. Serve hot with steamed rice.
