Title: Beefy Taco Bake

1/2 | c | Chopped green pepper |
1 | tb | Water |
1 | lb | Ground beef |
1 | Envelpe taco seasoning mix | |
16 | oz | Can whole tomatoes, undrained |
16 | oz | Can cut green beans, drained |
2 13/16 oz Can French-fried onion rings 8 1/2 oz Pkg cornbread muffin mix 1/2 c Shredded cheddar cheese Paprika
Combine green pepper and water in a 2-qt microwave-safe casserole. Cover with casserole lid. Microwave (high) for 1 1/2 to 2 minutes or until just about tender. Crumble ground beef into casserole. Microwave (high), uncovered, 5 to 6 minutes or until no longer pink, stirring once. Stir to break meat into small pieces. Drain. Add seasoning mix, tomatoes, green beans and half the onion rings. Mix lightly. Cover and microwave (high) for 5 to 6 minutes or until heated through, stirring once.
Meanwhile, prepare muffin mix as directed on package. Stir in cheese. Spoon batter into ring shape around outer edge of meat mixture. Microwave (high) for 7 to 8 minutes or until cornbread is no longer doughy, rotating dish once. Sprinkle with remaining onion rings and paprika. Let stand about 5 minutes before serving.
