Title: Beef-Spinach Stroganoff Casserole

10 | oz | Pkg. frozen chopped spinach |
1 | lb | Ground beef |
1 | tb | Instant minced onion |
10 3/4 | oz | Can cream of mushroom soup |
1 | c | Quick-cooking rice |
4 | oz | Can mushroom pieces, drained |
3/4 | c | Milk |
2 | tb | Ketchup |
1/2 | ts | Salt |
1/4 | ts | Nutmeg |
1/2 | c | Sour cream |
Microwave (High) spinach in package for 3 to 4 minutes or until thawed. Set aside.
Crumble ground beef into a 2 qt microwave-sage casserole. Add onion. Microwave (High), uncovered, for 5 to 6 minutes or until no longer pink, stirring once. Stir to break meat into pieces. Drain. Mix in spinach, soup, rice, mushrooms, milk, ketchup, salt and nutmeg. Cover with casserole lid. Microwave (high) 9 to 10 minutes or until rice is tender, stirring once. Stir in sour cream. Let stand a few minutes before serving.
If desired, stir in 1 cup shredded Mozzarella cheese with sour cream. Microwave 1 to 2 minutes or until cheese is melted.
