Title: Hamburger Relish

Yield: 7 Cups
4 | c | Cucumber |
3 | c | Onion |
3 | c | Celery |
2 | c | Green pepper |
1 | c | Sweet red pepper |
1/4 | c | Pickling salt |
4 | c | White vinegar |
1 | tb | Celery seed |
1 | tb | Mustard seed |
4 | dr | Green food coloring |

Chop all vegetables finely. Combine cucumber, onion, celery, green pepper, red pepper, and pickling salt in a bowl; cover and let stand overnight. Drain well. Mix vinegar, celery seed and mustard seed in a large saucepan. Add drained vegetables and bring to a boil. Reduce heat; cook 10 minutes. Add sweetener and food coloring; stir well. Ladle into hot sterilized jars. Seal. Stor in cool dark dry place.
