6 | oz | Shortcrust pastry |
4 | oz | Leeks; washed & very thinly sliced |
6 | oz | Streaky bacon; diced |
4 | | Eggs |
| | Salt and black pepper |
1 | pn | Freshly grated nutmeg |
: Set oven to 400 F degrees of Mark 6. Line a 7-inch round pie dish
with pastry. Place the thinly-sliced leeks on the pastry, then the layer
of bacon [ham] and lastly break the 4 eggs on top. Season, add nutmeg and
cover with a thin layer of pastry. Bake for about 40 minutes. Serve hot
with a green vegetable or cold with chutney and salad. Serves 4. _Favourite
