Milkweed: It should be picked early when just coming up, then socked in water several times to leach the sap out of it. It is the one of the best greens there is.. Most Park Service people will tell you it is poison in any form (as well as May Apples, though it has to be picked ripe, and many more. My theory being they don't want people raiding their holy parks, or having people being self sufficient) probably because the are so fond of the Monarch's.
Dandelion flower heads can also be breaded and fried.
The young fiddle heads of ferns can be de-scaled and cooked like asparagus.
Water lilies can be dug up, and the tubers boiled like a potato, though I would look this up to make sure, as it has been a long time, and there is a tuber that is poisonous. Also Solomon's Seal, and maybe False Solomon's Seal's tubers can be utilized.
Acorns can be soaked in a stream for several days and can be used in many ways.
A very good reference to uses of 1000's of planet, medicinal, industrial, and edible, is A MODERN HERBAL. ISBN 0-88029-921-5. This number is of the all in one hard bound, and is one of the most valued serious (as well as well used) reference in my library, though the above is from memory, as the reference is at the house.
