Title: Pineapple, Grapefruit and Ginger Marmelade a la Kevin

2 | x | Pineapples [ripe] |
2 | x | Grapefruit, sliced |
2 | x | Lemons, sliced |
200 | g | Ginger, fresh, diced |
2 1/3 | kg | Sugar [Raw sugar is good] |
4 | l | Water |
Peel pineapples, core and roughly mash the meat. Thinly slice and chop the grapefruits and lemons. Remove seeds and place them in a small muslin/ cheesecloth bag.
Combine fruits with approximately the same quantity of water, add muslin bag and stand 24 hours.
Boil gently for approximately 2 hours. Let this again stand for 24 hours. Remove the muslin bag of seeds.
Take fresh ginger and chop into 5mm/1/4" cubes, place into a larger muslin bag and add to mixture. Add sugar and bring to the boil, stirring to dissolve the sugar. Continue to boil for 2 hours. Allow to stand overnight.
Heat and bring up to boiling again. Continue boiling rapidly until setting point is reached, approximately 1 hour. Leave 10 minutes, remove bag of ginger before pouring into jars. Seal. From: Kevin Jcjd Symons Date: 15 Oct 97 National Cooking Echo Ä
