Title: Roasted Turkey a la Betsy's Dad

10 | lb | Turkey |
1/2 | c | Margarine, softened |
2 | ts | Onion Salt |
Thaw Turkey. Take plastic bag out of inside of turkey (contains gizzard,
heart, liver, neck). Wash turkey inside & out - dry by tamping w/ paper
towel. Rub margarine lavishly all over. Onion salt inside & out. Preheat
oven to 450^. Line pan w/ foil - long enough to cover top of turkey / fold
foil over loosely & crimp edges when covering turkey to hold in juices.
Smear pan & foil w/ margarine. Stuff turkey. Place turkey in pan - cover w/
foil, put in oven. Baste turkey ever 1/2 hours w/ it's own juices & recover
immediately. 10-12 lb. turkey will cook 4 to 4 1/2 hours. When turkey is
fully cooked - fold back foil & turn heat down to 350^ & let it brown 1/2
hour. Remove from oven & let cool while you make the gravy & mash potatoes.
NOTE: to cook a turkey, 20 min. per lb. (This is the way I made my first
turkey, and it's memories live on within me as one of the juiciest turkeys
I've ever had. I've tried to type in the recipe exactly as Betsy wrote it
for me, only correcting minor spelling errors. I've had this recipe on a
sheet of yellow legal paper for approximately 10 years. In those days, I
was not a cook, and needed the directions exactly as she gave them.
However, I'll never forget my first turkey being a success, thanks to
Betsy, and her dad's recipe! I've finally talked my husband into letting me
COOK our Thanksgiving dinner this year, and it will be his first taste of a
turkey I've cooked. When I found this recipe, I felt a warm glow, knowing
