Title: Marie's Orange Glazed Chicken

1/2 | ts | Salt (optional) |
1/4 | ts | Pepper |
1 | Boneless, skinless chicken | |
Breast half | ||
2 | ts | Vegetable oil |
1/2 | ts | Orange marmalade |
ds | Ground nutmeg | |
1/2 | c | Orange juice |
Combine flour, salt and pepper; coat chicken breast. In skillet, heat oil on medium; brown chicken. Spread marmalade on top of chicken; sprinkle with nutmeg. Add orange juice and simmer for 10 to 15 minutes or until chicken juices run clear. Yield: 1 serving
Diabetic Exchanges: One serving (with out additional salt) equals 4 lean meat, 1 fat, 1 fruit, 1/2 starch; also 370 calories, 71 gm sodium, 83 mg cholesterol, 23 gm carbohydrate, 31 gm protein and 17 gm fat.
