Title: Prawn, Snow Pea and Mango Stir-Fry [Rd]

185 | g | Snow peas |
1 | lg | Mango, ripe |
1 | tb | Vegetable oil |
2 | ts | Ginger, fresh, grated |
250 | g | Green prawns |
1 | tb | Dry sherry |
1 | tb | Soy sauce |
1 | ts | Cornflour, level |
Halve and slice the onion. Top and tail the snow peas. Peel and slice the mango.
Heat the oil in a wok or large frying pan and stir-fry the onion and ginger for 2-3 minutes. Add the snow peas and prawns and stir-fry for 1 minute.
Add the mongo, sherry and soy sauce; stir-fry for 1 minute while mixing the cornflour with 1 tablespoon of water. Add the cornflour to the pan, cooking and stirring for another 1-2 minutes until the sauce thickens. Serve immediately, with freshly cooked rice or noodles.
