Title: Spareribs of Pork in Honey and Soya Sauce [Lafitc]
Categories: Caribbean Pork Chinese Hawaii
Yield: 5 Servings

4tbWhite rum
5 Pork spareribs
  Vegetable oil
1 Garlic clove
1 Green ginger, 2cm long
1tbHoney
4tbSoya sauce, light variety
1tbFive-spice powder

Rub white rum into the pork spareribs and pour over a little vegetable oil. Put in a moderate oven to roast. When the ribs are cooked and becoming crisp, remove them.

In a heavy pan put 1 tablespoon of oil and fry the garlic and peeled, fresh ginger. Crush both of these by putting them through a garlic press, add 1 tablespoon, or so, of clear honey and 3 to 4 tablespoons of light soya sauce. Taste and try for balance. Now add a tablespoon of five-star powder. Stir together well for a few minutes and add the pork ribs. Cover with a lid and simmer gently for 20 to 30 minutes.

NOTE: The balance between the soya and the honey comes down to individual taste, so you may have to experiment. from LIFE AND FOOD IN THE CARIBBEAN by Cristine Mackie typo by Kevin Jcjd Symons From: Kevin Jcjd Symons Date: 06 Jan 98
