Title: Spareribs of Pork in Honey and Soya Sauce [Lafitc]

4 | tb | White rum |
5 | Pork spareribs | |
Vegetable oil | ||
1 | Garlic clove | |
1 | Green ginger, 2cm long | |
1 | tb | Honey |
4 | tb | Soya sauce, light variety |
1 | tb | Five-spice powder |
Rub white rum into the pork spareribs and pour over a little vegetable oil. Put in a moderate oven to roast. When the ribs are cooked and becoming crisp, remove them.
In a heavy pan put 1 tablespoon of oil and fry the garlic and peeled, fresh ginger. Crush both of these by putting them through a garlic press, add 1 tablespoon, or so, of clear honey and 3 to 4 tablespoons of light soya sauce. Taste and try for balance. Now add a tablespoon of five-star powder. Stir together well for a few minutes and add the pork ribs. Cover with a lid and simmer gently for 20 to 30 minutes.
