Title: Salmon in a Vibrant Sauce

1/4 | c | Fresh cilantro -- chopped |
3 | tb | Fresh ginger root -- peeled |

2 | tb | Garlic -- chopped |
2 | Jalapeno peppers -- seeded | |

3 | tb | Lime juice |
1 | tb | Canola oil |
1/2 | ts | Salt |
1/4 | ts | Ground turmeric |
1 1/4 | lb | Salmon fillet -- cut into |
2 | X2 inch | |
2 | c | White rice -- cooked |

Using a food processor, grind together cilantro, ginger, garlic and jalapeno until blended to a paste-like consistency. Add lime juice, oil, salt and turmeric. Transfer to a shallow glass dish, add fish pieces and turn in the marinade, making sure each piece is coated. Cover and marinate 5 to 10 minutes.
Put the fish and marinade into a large nonstick skillet. Cover with a tight fitting lid and place over medium-low heat. Cook gently about 12 minutes per inch of thickness, until cooked through. Serve with rice.
