Title: Pineapple and Salmon [Empire Cookery]

1 Lettuce leaf
1 Pineapple, sliced
4tsSalmon
  Salt
  Pepper
  Lemon juice
  Mayonnaise

Place a crisp lettuce leaf on a plate and place on it a slice of pineapple, then put 2 dessertspoons of red salmon on top of pineapple, add salt and pepper to taste, a squeeze of lemon, then pour over a little mayonnaise.

Serve one to a person. Suitable for hot weather.
