Title: Bacon and Egg Pie

Yield: 4 To 6

2 Sheets PAMPAS HOMESTYLE shortcrust pastry
3 Rashers bacon; or 4, chopped
1/4cParsley; chopped
1/2cMushrooms; sliced
  Black pepper
5smEggs
  Milk; for glazing

1. Blind bake on pastry sheet in a pie dish (see below).

2. Place bacon, parsley and mushrooms in pastry lined pie dish, season with pepper, and crack eggs over the filling.

3. Top with remaining sheet of latticed pastry, trim and crimp edges, glaze top.

4. Bake at 180~C for 25 to 30 minutes or until golden. Serve.

BLIND BAKING: Lightly grease quiche or flan dish, and line with pastry sheet. Line the pastry with two thicknesses of greaseproof paper or foil, cover with loading (uncooked rice or pasta shells) and bake for 10 to 15 minutes at 190~C, remove paper and loading, cool.
