1 | qt | Pure apple juice |
1/4 | c | To 1/2 cup sugar |
Taste the apple juice for sweetness, remembering it will be concentrated, and decide on sugar proportion according to your taste for sweet. Don't forget you can always add a bit more at the end. Combine the juice and sugar in the heaviest possible acid-resistant pan. Cook, stirring occasionally, over the lowest possible heat until the sugar has completely dissolved and the liquid reduced to about 2 cups.
Like maple syrup, will mold if stored at room temperature but will last indefinitely if refrigerated.
