Title: Fritter Batter for Fruit

4 | oz | Flour, whole wheat |
1 | Egg; separated | |
1 | tb | Oil (light oil, such as canola or sunflower) |
1/2 | c | Milk |
Put the flour and a pinch of salt into a bowl. Make a well in the center and put in the egg yolk and oil. Gradually stir in some of the flour from the sides and then beat in the milk, a little at a time. Beat the mixture until it is smooth and leave it to stand until the fruit is ready. Then stiffly whip the egg white and fold it into the mixture with a wooden spoon. After this, use the batter as soon as possible.
The oil for frying should be 375 degrees F.
Works well with apples, pears, plums, oranges, pineapples, peaches, apricots and bananas.
