1 T | B olive oil | |
1 m | d onion -- peeled and chopped | |
2 | cloves garlic -- peeled and | |

3 | /4 c | cider vinegar |
1 | /4 c | balsamic vinegar |
1 T | B lime juice | |
1 c | sugar | |
1 1 | /2 c | fresh cranberries |
1 l | g apple (unpeeled) -- cored | |
: | and chopped | |
1 | /2 c | golden raisins |
1 | /2 c | dried apricots -- chopped |
2 t | s fresh ginger root -- peeled | |
: | and minced | |
2 | whole cloves | |
1 t | s red pepper flakes | |
1 | /2 t | s salt |
: | lime zest -- from 1 lime |
Heat oil over med.-high heat and saute onion and garlic 5 minutes. Add vinegars,lime juice and sugar. Cook until sugar dissolves, about 5 minutes.
Add remaining ingredients. Reduce heat, simmer and stir for 15-20 minutes.
Let cool a little before serving, or chill in refrigerator for later use.
