Title: Ginger Honey

8ozFresh ginger
2lbHoney

Cut any withered bits off the ginger, then cut it into very thin slivers. Put the ginger into a food processor and grind it until it's as smooth as possible.

Pour the honey into a large heavy saucepan. (To get out the last bits, heat the jar in the microwave for about 30 seconds.) Stir in the ginger. Over low heat, stirring frequently, bring to a boil. Reduce the heat to low and simmer the mixture for 20 min, stirring frequently.

You can leave the honey unstrained or not as desired. Pour the honey into a sterilized jar, cool it and cap it tightly. It will keep indefinitely.

Uses: Add to marinades; glaze fruit tarts with it; stir a dollop into hot tea; pour it over vanilla ice cream or lemon sorbet; mix it with mustard and use it to glaze ham; mix it with mustard and soy sauce and use it to glaze chicken or duck; flavor whipped cream with it for pumpkin pie; stir it into seltzer for a refreshing drink.
