Title: Grandma Stewart's Cake

2 | Eggs | |
1 | c | Sugar |
1 | c | Flour |
1 | pn | Salt |
1 | ts | Baking powder; rounded |
1 | ts | Vanilla |
1/2 | c | Boiling water |
Beat eggs until light. Add the sugar and mix well. Measure a cup of flour into the sifter, add the salt and baking powder, and sift into the egg mixture. Mix well.
Stir in the vanilla and the boiling water; mix well and pour into prepared 8 x 8 square pan. Bake at 350 F for 20 minutes, or until a toothpick inserted into the center comes out clean.
This recipe may be doubled and baked in two 8 x 8 pans for a two-layer cake.
This cake comes out rather dense and not too sweet. It's excellent with a cream cheese or buttercreme frosting.
