1/3 | c | Non fat plain yogurt |

1 1/2 | c | All-purpose flour |
1/3 | c | Dark brown sugar, firmly packed |
1 1/2 | ts | Ground cinnamon |
1 1/2 | ts | Baking soda |
3/4 | ts | Baking powder |
1 | md | Apple, peeled/cored/chopped |
Heat oven to 375'f. Spray only the bottoms of 12 medium muffin cups with
PAM. In a large bowl beat milk, yogurt, egg whites, egg, vanilla and lemon
zest. In a separate bowl combine flour, sugar, cinnamon, baking soda and
baking powder. Fold dry ingredients in wet just until moist. Stir in apple.
Divide batter among muffin cups. Bake 18-20 minutes or until toothpick
inserted into center comes out clean. Immediately remove from pan and cool
on wire rack. 102 calories and 1 gram fat per muffin.
