Title: Maple-Walnut Rounds

3/4 | c | Firmly packed golden brown |
Sugar -- divided | ||
1 | c | Unsalted butter -- at room |

1 1/2 | ts | Maple extract |
1/4 | ts | Salt |
2 | c | All-purpose flour |

Preheat oven to 350~. In a food processor fitted with metal blade or in a blender, place 1 cup walnuts and process coarsely. Add 1/4 cup of the brown sugar and process finely; set aside. Combine butter, remaining 1/2 cup brown sugar, maple extract and salt in a large bowl. Beat on high speed until light and fluffy. Reduce speed to low, add flour and nut mixture and mix until just incorporated. Roll pieces of dough between your palms to form 1-inch balls. Arrange on ungreased baking sheets 1-1/2 inches part. Press a walnut half into center of each. Bake until brown around edges, about 20 minutes. Transfer to wire racks to cool. Store in airtight container at room temperature for up to 5 days. Makes about 3 dozen.
