Title: Strawberries and Lemon Cream

Yield: 8 Servings

5cSliced ripe strawberries
  (divided)
3tbLight corn syrup
LEMON CREAM
8ozSour cream
1/4cPowdered sugar
1tsGrated lemon peel
2tbFresh lemon juice
GARNISH
  Shortbread cookies

Combine one cup of the strawberries and corn syrup in blender or food processor, cover and blend until smooth. In medium bowl, combine strawberry puree and remaining strawberries, stirring gently to mix. Refrigerate until ready to serve

In small bowl, combine sour cream, powdered sugar, lemon peel and lemon juice, blend well. Refrigerate until serving time.

To serve, spoon about 1/2 cup berry mixture into each of 8 dessert dishes, spoon two tablespoons of lemon cream over top of each. Serve two shortbread cookies inserted into side of dish if desired.
