Title: Tag a Long Peanut Pie with Do Si Do Crust (Girl Scouts)

9 | oz | Pkg Do si dos Girl Scout cookies, broken up |
4 | tb | Peanut butter |
3/4 | c | Light brown sugar |
2/3 | c | Dark corn syrup |
2 | tb | Flour |
3 | lg | Eggs,lightly beaten |
2 | ts | Vanilla |
7 | oz | Pkg Tagalong Girl Scout cookies, coarsely chopped |
1 | c | Dry roasted peanuts |
This is a very rich pie, serve small slices.
Preheat oven to 375 degrees.
Grind the Do si does finely in a food processor. Add the peanut butter and continue to grind until all the cookie crumbs are moistened with peanut butter. Press the mixture in a 9 inch pie pan, forming the rim more thickly near the edge. Bake for 6 minutes. Remove from the oven.
Reduce the oven to 350 degrees.
Mix the brown sugar, corn syrup, flour, eggs and vanilla in a bowl just until blended. Stir in the chopped Tagalongs and the peanuts.
Pour the mixture into the prebaked pie shell and bake in the 350 degree oven for 45 minutes just until the top is browned but the pie is still gooey in the center.
Cool on a rack for at least one hour before serving.
