Title: Utah Apricot Mousse

Yield: 6 Servings
8 | oz | Heavy cream |
1/2 | Lemon, juice from | |
1 | c | Sweetened fresh OR stewed dried apricots |
Fresh apricot halves | ||
Fresh loganberries |
Whip cream until just stiff. Mix lemon juice and apricots. Fold into cream.
Turn into tray and freeze with setting at coldest point, or turn into mold and freeze.
Unmold and garnish with apricot halves and logan berries.
