Title: Sauteed Spinach and Red Peppers

1 | tb | Olive oil |
1 | ts | Olive oil |
2 | md | Red bell peppers |
2 | Garlic cloves, sliced | |
1 | pn | Crushed red pepper flakes |
8 | c | Steamed rinsed spinach |
1/4 | ts | Salt |
* Seed bell peppers and cut into strips. ** Do not dry spinach.
1. In large skillet, heat oil. Add bell pepers, garlic, and pepper flakes. Cook stirring frequently for 3-4 minutes.
2. Add spinach, with water still clinging to the leaves to the skillet. Sprinkle with salt. Increase heat to medium-high and cook, stirring occasionally, 3 minutes or until vegetables are tender.
Each half cup serving provides: 1/2 FA and 2V.
